A masala dosa is made by stuffing a dosa with a lightly cooked filling of potatoes, fried onions and spices. Onions (chopped finely) - 2 nos(large)
Garlic pods (chopped finely) - 6 nos
Ginger (chopped finely) - 2 tsp
Green chillies (chopped finely) - 4 nos
Mustard seeds -1/2 tsp
Cumin seeds -1/2 tsp
Dry red chilly(Kollamulaku) - 1 no
Curry leaves - few
Turmeric powder - 1/4 tsp
Vegetable oil - 1 tsp
Salt - - needed
- For chutney
Coconut - 1/2 of one
Green chillies - 4 nos
Ginger(chopped) - 1 tsp
Coriander leaves - A bunch
Lemon juice -1/2 lemon
Salt - needed
- Preparation method
Wash thoroughly and soak black gram and rice separately for 6 - 8 hrs.Grind them separately into very smooth paste and mix them together. Keep this dough to ferment overnight.
- For the filling (masala)
To hot oil in a pan, add mustard seeds, allow it to splutter then add curry leaf,red chillies and cumin seeds. To this add onion, ginger, garlic and green chillies. Saute till the onion changes its color.To this add the chopped potatoes, saute well and remove from flame.
- For making dosas
Heat a flat non stick pan and pour the dosa batter and spread it nicely with a ladle so that thin dosas are made.Spread oil on the top and sides of dosa, when the edges turn golden brown keep 3tbsp of masala in the center and then fold the dosa from both sides, one side over the other so that the masala is covered. Serve hot with chutney and sambar.
